Baked fennel with oranges and olives

Baked Fennel with Oranges and Olives is a light, fragrant, and incredibly simple dish to prepare. Inspired by the classic Sicilian fennel and orange salad, this version takes the same refreshing ingredients and transforms them in the oven, deepening their flavors. The sweetness of the oranges, the subtle anise notes of the fennel, and the briny kick from the black olives come together beautifully in this elegant side dish.

Ingredients

  • 4 medium fennel bulbs
  • 2 medium oranges
  • 50 black olives (pitted)
  • Extra virgin olive oil
  • Salt

Instructions

  1. Trim the fennel and cut it into slices.
  2. Place it in a colander and wash it well under running water.
  3. Put the fennel washed fennel in a large bowl.
  4. Peel and slice the ??oranges and add them to the fennel.
  5. Add a good pinch of salt, plenty of extra virgin olive oil and mix well.
  6. Place in a baking tray lined with baking paper. Top with the pitted black olives.
  7. Bakr in a preheated oven at 200° for about 35 minutes.
